Instructions

Preheat the oven to 200 °C. Line a baking sheet with parchment paper.

Cut the chicken into even cubes (about 2 cm). Break the broccoli into small florets, and cut the bell pepper into larger squares.

In a small bowl, mix the soy sauce, sesame oil, honey, apple cider vinegar, minced garlic and grated ginger. This will be your aromatic marinade.

In a large bowl or directly on the baking sheet, toss the chicken and vegetables with the prepared sauce until evenly coated.

Spread everything out on the baking sheet in a single layer and bake for 15 minutes.

Remove the baking sheet from the oven, add the cashews, gently mix them with the other ingredients, and bake for another 5 minutes, until the cashews are golden brown and the chicken is cooked through. Sprinkle with chopped spring onion before serving.
