Cut the cabbage (green and red) into very thin strips or shred it. Peel the carrots and grate them into thin sticks.

Salt the shredded cabbage in a colander and let it rest for 15 minutes. Then gently squeeze it with your hands to remove excess water. This will ensure the salad stays crunchy.

In a small bowl, prepare the dressing: whisk together the Greek yogurt, mayonnaise, apple cider vinegar, mustard, honey, and pepper.

In a large bowl, combine the squeezed cabbage, carrots, and (if desired) finely chopped onion.

Pour the prepared dressing over the vegetables and mix everything well so that every piece is evenly coated.

Place the salad in the refrigerator for at least 30 minutes to let the flavors meld before serving.
