Instructions

Preheat the oven to 150 °C. The lower temperature is key to making the puffed rice crispy without burning it. Line a baking tray with baking paper.

In a large bowl, mix the puffed rice, oats, chopped almonds, pumpkin seeds, sunflower seeds, cinnamon and a pinch of salt.

In a small saucepan over low heat, gently melt the coconut oil and mix it with maple syrup or honey until you get a uniform liquid.

Pour the liquid mixture over the dry ingredients in the bowl. Mix thoroughly with a wooden spoon so that all the puffed rice and oat pieces are evenly coated.

Spread the mixture over the baking tray in as thin and even a layer as possible. Bake for 20–25 minutes. Carefully stir the granola halfway through the baking time.

Remove the tray from the oven. The granola may still seem slightly soft at the end of baking, but it will fully harden and become crispy as it cools. Store it in an airtight container.
