Instructions

  1. 1Pour the grainy cottage cheese into the bowl of a blender or food processor. Make sure the cottage cheese is cold, as this will help it blend together better.
  2. 2Blend on high speed for about 1 to 2 minutes. During the process, stop the blender once or twice and scrape down the sides of the bowl with a spatula.
  3. 3If you want a thinner texture (e.g., for a dressing), add a spoonful of liquid and blend briefly again.
  4. 4Once the texture is completely smooth and lump-free, transfer the cottage cheese into an airtight container.
  5. 5Use immediately as a spread, or store in the refrigerator for up to 4 days for later use in other recipes.
