Instructions

Pour the oats into a saucepan, add the almond milk, a pinch of salt, cinnamon and the mashed banana.

Cook over medium heat, stirring occasionally, until the oats soften and most of the liquid is absorbed (about 5 minutes).

Reduce the heat to the minimum. While whisking constantly and quickly, slowly pour in the egg whites in a thin stream.

Keep whisking for another 2–3 minutes. You'll notice the oatmeal doubling in volume and turning extremely creamy and fluffy. The egg whites must be fully cooked but should not clump together.

Remove from the heat, stir in the vanilla and pour the oatmeal into a bowl. Garnish with nuts or fruit of your choice.
