Thoroughly rinse the millet in a strainer under hot water to remove the bitterness. In a dry saucepan over medium heat, briefly toast the rinsed millet (1–2 minutes) until it smells nutty.

Pour a mixture of water and plant-based drink over the millet. Add a pinch of salt, cinnamon, and grated apple (this will give the porridge a creamy texture and natural sweetness).

Once the liquid comes to a boil, reduce the heat to minimum, cover the saucepan, and cook for about 15–20 minutes, until the porridge absorbs most of the liquid and becomes soft. Stir several times in between.

Remove from heat and let it rest for 2 minutes. Divide into bowls and sprinkle with chopped walnuts and blueberries. Drizzle with a little honey if desired.
