Thoroughly rinse the soaked amaranth under running water in a fine-mesh strainer, until the water runs completely clear.

In a pot, combine the rinsed amaranth, coconut milk, water and a pinch of salt. Bring to a boil, then reduce the heat to a minimum.

Cover the pot and slowly cook the porridge for about 20–25 minutes. Stir occasionally so the amaranth doesn't stick to the bottom, until it absorbs most of the liquid and becomes creamy.

While it's cooking, prepare the pineapple. Cut it into small cubes and drizzle it with lime juice in a small bowl.

Once the porridge is cooked, stir in the vanilla and maple syrup. Remove from heat and let it rest for 2 minutes.

Serve the porridge in a bowl, top with the pineapple and sprinkle with coconut chips.
