Instructions

  1. 1Wash the cucumber and peel it if desired (if the skin is thin and organic, you can leave it on). Grate it coarsely.
  2. 2Lightly salt the grated cucumber and let it sit for 5–10 minutes. Then transfer it to a clean kitchen towel and squeeze firmly to remove as much liquid as possible. This prevents the tzatziki from becoming watery.
  3. 3In a bowl, mix the Greek yogurt, crushed garlic, olive oil and lemon juice.
  4. 4Add the squeezed cucumber and chopped herbs (dill and mint) to the yogurt mixture.
  5. 5Mix everything well together and add more salt and pepper if needed.
  6. 6For the best flavor, place the tzatziki in the refrigerator for at least 30 minutes before serving, to let the flavors of the garlic and herbs blend together.
  7. 7Before serving, drizzle with a little more olive oil on top and garnish with a sprig of dill.
