Instructions

Preheat the oven to 220°C (fan mode). Line a baking sheet with parchment paper. Cut the sweet potatoes into 2 cm cubes, and cut the broccoli into smaller florets.

On the baking sheet, toss the vegetables with olive oil, garlic powder, paprika, salt, and pepper. Spread them out in a single layer. Place in the oven for 20 minutes.

While the vegetables are roasting, pat the salmon fillets dry with paper towels. Season them with salt and pepper.

Once the vegetables have been in the oven for 10 minutes, heat olive oil in a pan. Place the salmon in the pan skin-side down. Cook for 4–5 minutes, until the skin becomes crispy and golden.

Flip the salmon, reduce the heat, and add butter, crushed garlic, and lemon slices. Cook for another 2–4 minutes, basting the fish with the buttery sauce.

Remove the vegetables from the oven (they should be tender with crispy edges). Plate the salmon fillet, drizzle with the sauce from the pan, and sprinkle with parsley. Serve with the roasted vegetables on the side.
