Toast the bread in a toaster or on a dry pan until golden brown and crunchy. As soon as it's toasted, rub the hot surface of the bread with a peeled garlic clove (like an eraser) to release its aroma, then drizzle with olive oil.

In a bowl, whisk together the eggs, Greek yogurt, salt and pepper. Whisk energetically for 30 seconds to incorporate air, which will ensure a fluffy texture.

Heat a pan over medium-low heat and add the butter. Once it melts (it must not brown), pour in the egg mixture.

Wait a few seconds for the edges to set, then use a silicone spatula to slowly push the eggs from the edge toward the center. Repeat the process until the eggs are cooked but still glossy and slightly moist ("soft scramble"). Remove from the heat, as they will continue to cook a bit more in the hot pan.

Pile the creamy eggs onto the prepared garlic toast. Sprinkle with fresh chives and, if desired, chili flakes. Serve immediately.
