Instructions

1
Preheat the oven to 200 °C. In a large pot, bring salted water to a boil and cook the pasta al dente (about 2 minutes less than stated on the package), as it will finish cooking in the oven. Drain.
2
In a large pan over medium heat, warm the olive oil. Add the chopped onion and sauté for 3-4 minutes until translucent. Add the ground meat and cook until browned. Drain off excess fat if needed.
3
Stir the garlic, oregano, salt and pepper into the meat and sauté for another 1 minute until fragrant. Pour in the tomato paste and simmer over moderate heat for 5 minutes to let the flavors combine.
4
Remove from heat and stir the fresh spinach into the sauce; the sauce's heat will be enough to wilt it. Then add the cooked pasta and half of the grated mozzarella to the pan (or a larger bowl) and mix everything well together.
5
In a separate bowl, mix the ricotta (or cottage cheese) with a little salt and pepper. Pour half of the pasta mixture into a baking dish, spoon dollops of ricotta on top, then cover with the remaining pasta.
6
Evenly sprinkle the remaining mozzarella and parmesan on top. Bake in the oven for 20–25 minutes, until the cheese melts and turns golden brown. Let rest for 5 minutes before serving and garnish with fresh basil.

Nutritional benefits

Thanks to its iron content (from lean meat and spinach) and vitamin B12, this meal helps reduce tiredness and fatigue, which is key after an intense workout or a long workday.
