Instructions

  1. 1Rinse the quinoa and cook it in salted water according to the package instructions. Once cooked, remove from heat and keep covered.
  2. 2In a bowl, mix the ground turkey meat, garlic and all the meatball seasonings. With your hands, shape small balls or patties (about 12–16 pieces).
  3. 3Heat olive oil in a pan and cook the meatballs over medium heat for about 4–5 minutes on each side, until fully cooked and golden brown.
  4. 4While the meat is cooking, prepare the tzatziki: firmly squeeze the grated cucumber to remove excess water. In a small bowl, mix it with Greek yogurt, lemon juice, garlic and herbs.
  5. 5Divide the cooked quinoa among four deep bowls. Top with sliced cucumbers, tomatoes, red onion, olives and the cooked turkey meatballs.
  6. 6Sprinkle everything with feta cheese and add a generous spoonful of homemade tzatziki. Drizzle with additional lemon juice if desired.
