Coarsely grate the zucchini, lightly salt it, and let it stand for 10–15 minutes. This step is essential to allow the zucchini to release its water.

After the time has passed, squeeze the zucchini firmly with your hands or through a clean kitchen towel. Removing the excess liquid ensures the patties won't fall apart during baking.

In a pan with a drop of oil, quickly sauté the chopped onion until translucent. Add the garlic, sauté for just 30 seconds, and remove from heat to cool slightly.

In a large bowl, mix the ground meat, squeezed zucchini, sautéed onion and garlic, egg, breadcrumbs, mustard, and marjoram. Season with salt and pepper.

Knead the mixture thoroughly with your hands until you get a uniform mass. If the mixture is too wet, add another tablespoon of breadcrumbs.

Preheat the oven to 200 °C. Line a baking tray with parchment paper.

With moistened hands, shape patties the size of your palm and place them on the baking tray. Lightly brush or spray the tops of the patties with olive oil for a nicer color.

Bake for 20–25 minutes. Turn the patties halfway through baking so they brown evenly on both sides.

Nutritional benefits

Replacing part of the meat with zucchini increases the fiber content and reduces the caloric density of the meal, while oven baking preserves a high protein content without added saturated fats.
