Instructions

1
Preheat the oven to 180 °C and line a baking pan with parchment paper.
2
In a large bowl, mix the oat flour, almond flour, baking powder, and salt. Add the maple syrup, almond butter, and vanilla, and mix until you get a uniform, slightly sticky mixture.
3
Press about two-thirds of the mixture into the bottom of the pan and smooth it out evenly. Set the remaining third aside for topping.
4
In a smaller bowl, mash the raspberries with a fork, stir in the chia seeds and lemon juice. Let it sit for 5 minutes to thicken, then spread it over the base in the pan.
5
Crumble the remaining dough over the raspberry filling. Add dollops of almond butter on top and gently swirl them with a knife into a pattern.
6
Bake for 25–30 minutes, until the edges are golden brown. The pastry must cool completely before slicing, so the layers can set.

Nutritional benefits

Thanks to the high fiber content from chia seeds and oats, along with the healthy monounsaturated fats from almond butter, this dish supports stable blood sugar levels and long-lasting satiety.
