Instructions
- 1In a food processor, grind the almonds and oats into a coarse flour. Add the dates, coconut oil and a pinch of salt. Blend until the mixture starts to stick together into a sticky dough.
- 2Press the mixture into the bottom and sides of a pie pan. Place in the fridge while you prepare the remaining layers.
- 3For the caramel, blend the soaked dates, almond butter, vanilla and salt in the cleaned food processor. Gradually add the soaking water until you get a completely smooth, thick caramel cream.
- 4Spread the caramel evenly over the prepared base.
- 5Slice the bananas into rounds and arrange them tightly over the caramel layer.
- 6In a bowl, whisk together the soy yogurt and protein powder with a hand whisk until smooth. Spread this layer over the bananas.
- 7Sprinkle the pie with grated vegan chocolate and chill in the fridge for at least 1 hour, so all the layers can set.
