Instructions

  1. 1Pour boiling water over the rice noodles, let stand for 3–5 minutes, then drain and rinse under cold water.
  2. 2In a small bowl, mix the peanut butter, soy sauce, ginger, lime juice and honey. Gradually add warm water until you get a smooth, creamy sauce.
  3. 3Pour lukewarm water into a shallow bowl. Dip a sheet of rice paper in the water for 5–10 seconds to soften it slightly (but not too much), and place it on a damp cutting board.
  4. 4On the bottom third of the paper, place a piece of lettuce, a bit of noodles, and sliced vegetables (carrot, cucumber, bell pepper) along with fresh herbs.
  5. 5In the middle of the paper (above the vegetables), place three shrimp tails with the back side facing down – this way they will be visible through the paper once rolled.
  6. 6Fold the bottom edge of the paper over the filling, then fold in the side edges and roll everything up tightly to the end. Repeat with the remaining sheets.
  7. 7Serve the rolls immediately, cut in half or whole, together with the prepared peanut sauce.

Nutritional benefits

Thanks to the high content of quality protein and omega-3 fatty acids from the shrimp, this meal supports heart health and tissue regeneration, while also providing plenty of antioxidants from the fresh vegetables.
