Preheat the oven to 175 °C. Line a baking pan with parchment paper. In a bowl, mix the almond flour, coconut flour, melted coconut oil, maple syrup and salt. Press the mixture evenly into the bottom of the pan.

Bake the base for 10–12 minutes, until golden brown. Remove from the oven and let it cool completely (this is key for crispness).

In a small saucepan over low heat, warm the peanut butter and maple syrup. Stir just enough for the ingredients to combine into a smooth, thick mixture. Stir in the vanilla and salt.

Spread the caramel over the cooled cookie base. Place in the freezer for 20 minutes to let the layer set.

Melt the dark chocolate with coconut oil over a water bath. Pour it over the set caramel layer and, if desired, sprinkle with a few grains of coarse salt.

Chill in the refrigerator for at least 20 minutes, until the chocolate is completely set. Before cutting into bars, let it sit at room temperature for 5 minutes so the chocolate doesn't crack.
