Instructions

  1. 1In a glass jar, first mix the dry ingredients: rolled oats, protein powder, chia seeds, and a pinch of salt. The salt will enhance the sweetness of the vanilla without adding extra sugar.
  2. 2Add almond milk, soy yogurt, and vanilla extract to the dry mixture. Stir everything thoroughly with a spoon until you get a smooth mixture with no lumps of protein powder.
  3. 3Sprinkle blueberries on top (if using frozen ones, they will release a wonderful juice overnight). Seal the jar tightly and place it in the refrigerator for at least 4 hours, preferably overnight.
  4. 4Before eating, give it a quick stir. If the mixture is too thick, add a spoonful or two of milk. Just before serving, sprinkle with chopped almonds to keep a crunchy texture.

Nutritional benefits
