Use a spiralizer to shape the zucchini into noodles. Place them on paper towels and lightly salt them to draw out excess water, then pat them dry.

In a large pan over medium-high heat, warm the oil and butter. Add the shrimp, season with salt, pepper, and chili flakes. Cook for 2–3 minutes, until they turn pink.

Add the chopped garlic to the pan and sauté for another 1 minute, until fragrant. Remove the shrimp from the pan and place them on a plate (this keeps them juicy).

Add the zucchini noodles to the same pan. Sauté, stirring, for just 2 minutes, so they warm through but stay firm (al dente).

Return the shrimp to the pan with the zucchini noodles. Pour in the lemon juice, add the zest, and sprinkle with parsley. Mix everything well together.

Serve immediately, optionally topped with a little parmesan for extra depth of flavor.
