Take the meat out of the fridge at least 30 minutes before cooking so it reaches room temperature. Pat it dry with a paper towel.

Heat a pan until very hot. Brush the steak with a little oil and cook it over high heat for 3–4 minutes on each side (for medium doneness). While cooking, add garlic and rosemary to the pan for extra aroma.

Place the cooked steak on a warm board or plate and let it rest for at least 5–10 minutes. This is a key step to keep the juices in the meat.

While the meat is resting, prepare a bed of arugula and halved cherry tomatoes in a bowl. Season with oil, balsamic vinegar, salt, and pepper.

Slice the steak into thin strips (tagliata) across the grain. Place them on the prepared arugula.

Using a vegetable peeler, shave Parmesan into larger shards over the meat and salad. If desired, add a few drops of balsamic vinegar and serve immediately.
