Instructions

Preheat the oven to broil or to 200 °C. In a large bowl, whisk together the eggs, milk, garlic powder, salt and pepper.

Heat the oil in a pan over medium-high heat. Brown the ground turkey meat until fully cooked. Add the onion, bell pepper and mushrooms and sauté for another 5 minutes, until the vegetables soften.

Spread the vegetables and meat evenly over the bottom of the pan. Pour the egg mixture over them. Let it cook on the stovetop for 3–5 minutes, until the edges are firm but the center is still slightly runny.

Carefully drizzle the tomato sauce over the top of the eggs and gently spread it with a spoon. Sprinkle with grated mozzarella and dried oregano.

Transfer the pan to the oven. Bake for another 3–5 minutes, or until the cheese melts and turns golden brown and the frittata has fully risen.

Remove from the oven, let rest for 2 minutes, then garnish with fresh basil and cut into wedges.
