Instructions
1
Preheat the oven to 180 °C. Grease a loaf pan or line it with baking paper.
2
In a large bowl, mash the ripe bananas well with a fork until smooth. Add the eggs, Greek yogurt, melted oil, honey, and vanilla. Whisk well until the ingredients are combined.
3
Gradually mix the dry ingredients into the wet mixture: spelt flour, baking soda, cinnamon, and salt. Mix only until the flour disappears (do not overmix, so the cake doesn't turn out dense).
4
Finally, gently fold in the chopped dark chocolate and walnuts with a spatula. Pour the mixture into the prepared pan and, if desired, sprinkle a few more pieces of chocolate on top.
5
Bake for 45–55 minutes. Check with a toothpick – if it comes out clean from the center (no liquid batter), the cake is done. Leave it in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Nutritional benefits
Thanks to the use of whole-grain flour and Greek yogurt, this meal contributes to a longer-lasting feeling of fullness and more stable blood sugar levels compared to classic desserts.
