Prepare a baking sheet and line it with parchment paper. It's important that the paper also covers the edges, so you can lift the bark more easily later.

In a bowl, mix the Greek yogurt, honey (or maple syrup), vanilla, and a pinch of salt until smooth. Tip: Using full-fat yogurt and sweetener is key so the bark doesn't turn out too hard or icy.

Pour the yogurt mixture onto the prepared baking sheet. Spread it evenly with a spatula to a thickness of about 0.5 to 1 cm. Don't make the layer too thin, or it will melt too quickly.

Evenly sprinkle chopped strawberries, blueberries, pieces of dark chocolate, and nuts on top. Using the back of a spoon or clean hands, gently press the fruit and toppings into the yogurt so they don't fall off during freezing.

Place the baking sheet in the freezer for at least 3 hours, or until the mixture is completely firm.

Once the mixture has set, lift the paper off the baking sheet and break the frozen slab into irregular pieces (like bark) using your hands or a knife. Serve immediately, as it melts quickly. Store the remainder in the freezer in an airtight container for up to 1 month.
