Instructions

In a small bowl, prepare the gelatin by covering it with cold water and letting it sit for 5–10 minutes to bloom.

In a saucepan over medium heat, warm the milk, honey, and vanilla bean seeds. The milk should heat through but not boil.

Remove the saucepan from the heat and stir the bloomed gelatin into the warm milk. Whisk until it has completely dissolved.

In a larger bowl, whisk the Greek yogurt lightly, then slowly pour in the milk mixture while stirring constantly. Mix until the mixture is completely smooth.

Pour the mixture into four molds and place them in the refrigerator for at least 4 hours (preferably overnight) to let the panna cotta set.

Before serving, prepare the fruit topping: quickly heat the berries with lemon juice until they release their juice, then pour over the set panna cotta.
