Instructions

Rinse the quinoa thoroughly under hot water in a fine sieve. Cook it in a saucepan with almond milk for about 12–15 minutes, until it absorbs most of the liquid, then let it cool slightly.

In a bowl, mix the egg, cocoa powder, maple syrup, vanilla, and a pinch of salt. Stir in the cooked quinoa and half of the crumbled dark chocolate.

Lightly grease a baking dish and pour in the quinoa mixture. Evenly distribute the raspberries on top and gently press them into the mixture.

Sprinkle with the remaining chocolate and chopped hazelnuts.

Bake in a preheated oven at 180 °C for about 20–25 minutes, until the bake firms up and the raspberries soften slightly.

Let the bake cool for 5 minutes, then serve it warm (it's excellent with a spoonful of Greek yogurt).
